The recently redecorated restaurant L’Ambroisie at Hôtel de Ville in Echallens immerses guests in an elegant atmosphere in pastel shades and modern furniture. That's the setting - and now for the culinary delights. Veal, beef or pigeon: the meats are sublimated by a very specific type of cooking. The same goes for fish dishes that are embellished with exotic flavours, certainly due to the travels of chef Alain Meyster, who received 14 out of 20 GaultMillau points.
Heading the Hôtel de Ville since 1999, Alain Meystre has shared his talent with fans of good food: he regularly gives workshops outside the restaurant’s opening hours. He also publishes recipes on his internet site.
In addition to the chic L’Ambroisie, the brasserie and the pretty terrace welcome guests in a warm or sunny atmosphere. Vaudios wines are given prominent place on all the tables of the restaurant, especially the AOC designations Bonvillars and Côtes de l’Orbe.
